Obra\u0111uju\u0107i novinarski stil nau\u010dili su \u0161to je intervju. Spojiv\u0161i to znanje s gradivom o osnovnim obilje\u017ejima hrvatskih narje\u010dja, nastali su ovi ukusni, ali i vrlo vrijedni dijalektolo\u0161ki materijali.<\/p>\n<p style=\"text-align: justify;\"><!--more--><\/p>\n<p style=\"text-align: justify;\">Zahvaljujem marljivim u\u010denicima i njihovim uku\u0107anima koji su im pomogli.<\/p>\n<p style=\"text-align: justify;\">Dobar tek!<\/p>\n<p style=\"text-align: right;\">u\u010diteljica Martina Butkovi\u0107<\/p>\n<p style=\"text-align: center;\"><strong>\u0160URLICE<\/strong><\/p>\n<p style=\"text-align: justify;\">Klade se muke i jaja va kuhanu vodu i malo ulja, zamisi se tvrdo testo i pusti se pol ure da stoji. Jimela je devet dice.\u00a0 Nje vnuk, moj stric Anjelo, mi je, jo\u0161 kad san bila mala,\u00a0 pravljal\u00a0 kako je nje brudit zi palentu jimel sve gu\u0161ti od ovoga svita i da nikad ne \u0107e pozabit, kako je ona delala ta brudit.\u00a0 A kuhala je onako kako se to kuhalo na Punti. Nje brudit je bil pravi puntarski brudit, \u00a0a\u0161 ona je\u00a0 bila prava Puntarka do devetoga kolena. Kako su te slamarice lipo \u0161u\u0161kale kad smo mi di\u010dina hodeli le\u0107! A mi di\u010dina bimo\u00a0 se bili \u017evelto spravili kolo stola, pomolili, pojili i doboto ni rabilo ni pijati oprat.<\/p>\n<p style=\"text-align: justify;\">\u00a0A stric je jo\u0161 rekal i ovo: Ni bila palenta svaki put zi bruditom. Vi\u0161e puta je bila zi mlikon od koze ku je baba jimela, drugi put palenta,hladno zrizana na fete i spr\u017eena. Na to se je potlek kladalo malo cukara. I to je bilo altroke kola\u010d, takova palenta je vero lipo hrskala v usteh. Niki od dice ni nikad brontulal da mu se ne\u00a0 pija\u017ea. Tako je to bilo onda! A danaska? \u2013 Danas dica ji\u0161\u0107u samo nikakove sla\u0161\u0107ice z butige, \u0107ikulatice, nutele: svega i sa\u010desar a ni\u0161 doma\u0107ega. Govore da framentun i palenta ni za ljudi nego za blago va \u0161talji. Ala, neka njin bude! Sve skupa se dobro zmi\u0161a. Na \u0161paher va padelu se klade fanj ulja i \u010deka da se dobro stepli. Zi malu \u017eli\u010dicu se klada testo va ulje i frite se \u0161ubito napuhnu. Onda klademo muku i prah za dizanje testa i ako \u0107emo, moremo klast malo korice od limuna, jabuke, suhoga grozja ali cimeta tako da testo bude fanj gusto. Ulje steplimo va padeli, mora bit toliko ulja da frite moru plavat va njen, ne sme takivat dno. Va svaku ruku zememo malu \u017eli\u010dicu. \u017dli\u010dice umo\u010dimo va padelu zi uljen. Z jenu \u017eli\u010dicu zememo testo za frite, stavimo nad padelu pa z drugu \u017eli\u010dicu rinemo testo da se friga. Ne smimo prepunit \u017eli\u010dicu zi teston a\u0161 to \u0107e nan pomo\u0107 da frite budu lipe okrugle. Ako bimo prepunili \u017eli\u010dicu onda bi frite imele kako nike repi. Ne smimo prepunit padelu zi fritami, moramo pustit mesta da se moru napuhivat i da se moru lipo same obrnut. Kada se dosti pofrigaju na jenoj bandi, obi\u010dno se same obrnu na drugu, ako ne, samo ih malo taknemo zi pirunon pa \u0107e se obrnut.
